Peanut meal is the product that remains after the extraction of oil from peanuts. In some foreign countries it is called groundnut meal. Expeller-processed peanut meal contains about 5% fat. The fat in peanut meal is unsaturated and can develop rancidity easily. It is best to use solvent-extracted peanut meal, which contains about 2.1% fat.
